arugula and white bean salad

We never knew how much we liked arugula! 
Here's what I've figured out...
the fresher the better.
That goes for just about everything, 
but, especially with the arugula - 
eat it the same day it's picked.

And, of course, I didn't have a lemon for the dressing, 
so I used....
pineapple juice.
I substitute it for just about anything.
