One of my favorite things to do in the kitchen
is to roast a pork loin,
and then, see how many different meals
I can make with the leftovers.
roasted pork loin
*season with olive oil, salt, and pepper
*add veggies to the pan for an instant side dish:
onion slices, garlic, potatoes, turnips, carrots...
*cook in 375 degree oven for 1.5 - 2 hours
(time will depend on size of roast)
*temp should be 160
I just slice it into pork chops for dinner the first night,
and then, I shred the rest before putting it away.
These tacos are my favorite!

*thinly slice and saute an onion
*add 2 cans of your favorite enchilada sauce
*you can also add green chillies, chipotles, etc.
*add the shredded pork
*let it simmer 5 - 10 minutes
*serve it on corn tortillas
with your favorite toppings
ours are:
cheese, sour cream, cilantro, chopped green onion, and advocado

You could easily substitute chicken or beef if you don't eat pork.
