enchilada casserole



And, this is what happens with the leftovers from
shredded pork taco night...

*I usually go ahead and put this together on taco night,
so that all I have to do is pop it in the oven the next night.

* layer it up like a lasagna
*corn tortillas on bottom
*layer of refried beans mixed with a can of rotel
*cheese
*tortillas
*layer of leftover pork
*cheese
*tortillas
*more cheese
*top with black olives or jalepenos

*bake in the oven at 350 for about 45 - 60 minutes
until it is heated through and all the cheese is melted
*serve it with the same toppings from taco night

....and, I had enough to make an extra casserole for the freezer!
